i have been juicing burdock root, and also just tried fermenting it. both are wonderful. burdock is super high in inulin, which is probiotics favorite food. it can be up to 45% inulin. thats why it was an ancient cancer cure, as the beneficial microorganisms clung ot the root to consume the inulin. if you ate hte unwashed root you got a lot of those soil based organisms. i now only eat the fresh root, not the dried stuff. not that the dried stuff is bad or anything, i just prefer the fresh.
