Even though the sacrifice of Abel and Cain were both acceptable, God looks upon the heart and Cain's heart was found wanting. Cain had merely brought "some of the fruits of the soil," whereas Abel had brought the choicest "fat portions of the firstborn of his flock." However, I believe that the blood sacrifice of Abel was a foreshadowing of the ultimate blood sacrifice of Christ, which has the power to save the world from sin. Hebrews 9:22--Without the shedding of blood, there is no remission of sin.

Oh yeah...In Leviticus 3, it talks about these animal sacrifices, and in verse 16, the fat is burned as a tribute, a consecration, to the Lord.
Animals had to be slaughtered so that the blood could "vicariously" cleanse the people from their sins
until that perfect sacrifice came: Jesus Christ. Colossians 2 talks about human regulations. Verse 13-17: ...He forgave us all our sins, having canceled the written code, with its regulations, that was against us and that stood opposed to us; he took it away, nailing it to the cross. And having disarmed the powers and authorities, he made a public spectacle of them, triumphing over them by the cross. Therefore do not let anyone judge you by what you eat or drink, or with regard to a religious festival, a New Moon celebration or a Sabbath day.
These are a shadow of the things that were to come; the reality, however, is found in Christ.
