Ouch! Sounds like you learned a lesson the hard way. Breaking a fast needs to go slow, starting with one mild fruit the first day, chewing it very thoroughly to encourage digestive juices to start secreting. Eat the same fruit, add another fruit and add one or two "above ground" vegetables the second day. Again, chew, chew, chew.
I wouldn't add any food with oil until at least the fifth day. If you make a salad, use only lemon juice and herbs in the dressing.
One needs to get the digestive system working and get enough bulk to let peristaltic action start up again before adding things with oils. You know your peristaltic action is functioning when you pass your first natural movement.
