Hi Caitlin, there's also the possibility that you just don't like mango!?! May I remind you that it is a very high source of Iodine though, so you might wanna aquire a taste. If it's still somewhat green, then you can get a recipe for chutney,... aW shucks, anyway you slice it (literally) Aa jest loves *mango*.
I have been adding mango to my cottage cheese and flax seed oil for some time, but the next way I'm going to try is as follows:
Jazmine rice cooked with plenty of celtic Sea Salt and coconut oil. When ready to serve warm, topped with more CO, coconut flakes and chunks of fresh mango. The sweet/salty combination is awsome. This mimics what is served for desserts at many Thai restaurants and has always been one of my favorites. In northern California, where the Asian population is huge, you can get this even at mall food courts, but I bet they don't use as nice a CO as what we are seeking here.
