Mango


A fresh RIPE mango should have about the same texture as a ripe peach. slightly firm yet kinda squishy. The color should be similar as well, a bright yellow to golden color, depending on the variety. Before it is peeled, the skin should "give" slightly to the touch, or you can eat it even after it is getting a little bit softer, with a few speckles showing up. That's the sugars developing. A mango that is not fully ripe is YUCK :-( but a truly ripe mango should tantalize your senses! You can ripen a mango in a paper bag at room temperature, put a banana in the bag too if you want it to ripen faster.
