Hello, Cindy--

All your questions are handled in the book Nourishing Traditions, by Sally Fallon and Mary Enig. It's packed full of information, and you'll find that you can eat loads and loads! Another good one is Eat Fat, Lose Fat, by the same authors. Actually, that might be a good start for you--it actually has food plans that you can follow, and really just covers the basics of NT.

I would agree with the previous poster--Soy is not a good thing, not unless it's fermented, as in tofu or tempeh. It also interferes with thyroid function, something you DO NOT want if you are trying to lose weight. But, as I say, I would highly recommend that you read NT and/or EFLF--it will save you a lot of time posting on message boards, and you'll be getting all the information first-hand. Of course, if you still have questions, that's what these message boards are for!
