Who is this 'they' you are referring to? There is plenty of info around stating kefir has yeasts in it.

It is no secret kefir has several types of yeast organisms in it. If people do their due diligence and read up on kefir they will find links to Doms Kefir In Site. He has lists of all the organisms that are natural to both milk kefir and water kefir on his site. Inputting 'kefir' on google for instance will not fail to bring up Dom's kefir site.
