Adzuki Beans/ burrito or pita fillers


well here goes... Adzuki Bean/Burrito or pita fillers
remember the texture will be like chickpeas.

don't ask me about time (lol) since I go slow,
and really dont pay attention to it.

after rinsing.
put 8 oz adzuki beans in pot
Cover with water.
soak overnight.

Bring them to boil when time comes to cook.
boil about an hour at a light boil.

in meantime,
cut up 3 large tomatoes.
put about 1 tablespoon sunflower oil in pan with tomatoes
to heat at med temp.
add about 1/4 tsp cayenne,
plus about say 1/16 unrefined salt
and a dash of black pepper.
leave this to simmer on low heat.

then chop about 1/3 of a very large yellow onion.
stir fry it in a small bit of sunflower oil
til lightly browned.
throw it in with tomato mix.

gently warm 2 very large hugh garlic cloves, chopped,
in same pan you stir-fryed onions in.
(in very small amt oil)
add them to the tomato mix, before they turn brown.

when beans are soft yet crunchy
(like chickpeas/gazpauchos etc)
a light bit firm still ,
add them with a slotted spoon to the tomato mix
stir it all well.

put lid on and let it steam itself to mix the flavors.

when you feel happy with texture etc,
put them on flour tortillas
(made with no lard or preservatives )

roll up and enjoy them.

my son garnished his with lettuce,

I would have added jalapeno peppers to it,
(a very few chopped tiny) during cooking.

I also would have garnished with black olives.

I think it would have been better
over a fresh spinach salad
or with romaine lettuce perhaps in a pita style bread?

overall it was a good recipe.
I will certainly work more with it, and see how i can
improve on it.

it was easy enough to make and filled me up *smile*
so i was happy.
