One time on "Oliver's Twist", Jamie Oliver made a delicious-looking green minestrone. He got a lot of fresh veggies such as green beans, cabbage, cauliflower, asparagus, green peas, etc. He cooked all of these, adding the asparagus last, plus some spaghetti noodles and one small can of tomato paste and some water. When that was all heated after only a few minutes, he blended up a small portion, then added it back (thickens the soup). It was pretty easy, really. It wasn't a thick red tomato-based soup, I would say the focus was on green veggies. You could add a whole grain pasta, some whole grain such as barley, or forgo those and just have a veggie soup.

One soup I love is a vietnamese noodle bowl. You could search for recipes on this but I'll just give you an idea. You have a chicken/veggie/herbal broth, VERY hot. Common is thin slices of raw beef, "cooked" in the soup broth. I like the chicken one, where you put cooked pieces of chicken meat in. They use rice vermicelli although you can use whatever you want. Also added are onions, mung bean sprouts, a few bits of chilis, fresh cilantro, and LOTS of fresh basil. All of that last list are just added to the broth at the table. By the time it cools down enough to put in your mouth, it's done. This seems to be a healthier version of chicken soup, quite healing in its own way.
