I made variations on the millet with sweet vegetables and the quinoa salad. I've been cooking healthy for a long time, so it's pretty easy for me to substitute and get creative. I used indian spices with the millet & sweet vegetables and made sort of a porridge with that (although I still don't have the hang of pressure cooking down). It sort of turned to paste after it was refrigerated. If I come up with anything really stellar, I'll post later. Mostly I'm just doing things really simple, a lot of steamed veggies, salads, etc. I'll probably come up with my own soup recipes, too. Most of the stuff in their book seems really bland, but I get the principles, so I can improvise. Hey, roasted red peppers pureed into a soup stock would be awesome.....whoa.... that's next on the list...
