I've never been a veggie person, but found that adding spices makes them very tasty.
If you go to your library, they may have ayurvedic cook books. I have a book called Ayurvedic Healing Cuisine by Harish Johari. It's a great place to start if you haven't done so already.
This one time HUGE meat eater, now loves basmati rice cooked with tumeric, fennel seeds, cumin and salt with some unsalted butter added after cooking. :)
