Boldyloxx - "Pizza, Pizza"
I too have learned a lot from your "journey"...
Here is some reciprocity that I hope you enjoy!
I eat "sprouted whole grains" bread & was so pleased to find tortillas too! I am a "pizza freak" and it is the one food I can't SEEM to do without...so, naturally I went to work when I found those tortillas teehee :-)
I usually have a collection of fresh & home roasted organic veggies on hand - they vary according to price & what's available....here goes!
First lightly spray top of tortilla with olive oil & light dusting of garlic powder then cover with spinach leaves [this protects it from juices of veggies & keeps it from getting soggy and the juices "steam" the spinach]
Then I layer thin slices of onions & partially dried plum tomatoe slices [makes the flavor more intense]
Next comes first layer of spices/herbs: fresh basil, oregano, and McCormick coarse ground mixed pepper blend [can't live without it] & raw garlic
Then both roasted & thin raw slivers of green, red, yellow, orange peppers [whatever you like or have on hand] plus reconstitued & fresh mushrooms [same applies]
More spices - roasted garlic & more pepper blend &
Sea Salt
Top with light layer of fine shredded soy mozarella or parmesean cheese & drizzle olive oil over all.
I bake at 450 for about 10 min. You will be ble to tell what looks good to you!
Although only 6", this is a BIG meal! Since I usually have a green salad with it I often have at least 1/3 left over for a snack.
I've found that the combinations of raw/roasted gives great variety to taste & texture - a real "layering" of taste experience!
I'm sure once you get started you will come up with lots of variations yourself! I usually have some type of this at least 3 X a week - also do a real "tortilla" variation, but this pizza one is my favorite!
