Onion is good for some organs but not for all. According to many Chinese herbal medicine theory, liver does not like onion (including green onion), garlic, leek, and many hot stuff like hot pepper and spices. Liver is categorized as Wood among the five elements and same for the gallbladder, liver as the yin Wood and gallbaldder as yang Wood. The hot spicy food (hot taste not necessarily hot in temperature) has a lot of "fire" in the nature that burns the wood. It sounds like you have weaker liver than average people. Without gallbladder, you Wood element in your body in quite weak. You may need to consider liver detoxing. But I can't think of anything to replace the removed gallbladder. I think you need some digestive enzymes together with your food, a lot of fresh raw vegies and fruits. Cut down or completely avoid dairy, meat, greasy and spicy food.

In the time, don't feel bad about being able to take onions. They may not be good for you anyway. Many Indians (Asian Indians) and Buddhists don't eat onion, garlic, leek, green onion etc. because there is a saying that these items have some impure substances. These people don't particularly suffer more diseases than average people. I personally have not had any of these things for 12 years (though I can eat a lot onion stuff with no reaction at all) and I am way healthier than most people.

Nutrition wise, Chinese herbal theory categorizes fresh vegies and sour fresh fruits as good food for liver system. Lemon is neutral in its character (not hot nor cold) and is particularly good for liver. It can help liver expel toxins taken either alone or together with some good olive oil. Honey is also good for liver if taken with cold water. Keep me post it once in a while to see if this info helps.
