I don't know about bacteria, but tan color stool means poor liver function, dark brown: good liver function, green: bile.

But sometimes, when cleansing dark color actually means mucoid plaque (the smell shoulc warn you).

Floating stool: too much oil
With candida, you should keep your (good EPA) oil intake high, go up to the floating level and reduce then, but not before.
