Nourishing Traditions Question


Hello~ I just picked up the cookbook Nourishing Traditions. There's a lot of great info. in there, but it left me with a few questions I'd like to get some feedback on. She talks a lot about grinding your own grains because store-bought flour (whether whole wheat, spelt, etc.) goes bad quickly. I do not own a grinder and probably will not be able to get one at the moment. Does anyone have any thoughts on this topic? If you are going to buy it from the store, is it better to keep it in the fridge? Any help would be greatly appreciated. Thank you.
