If you do a little research/reading, you'll see how incredibly easy it is to incorporate tofu into your diet. The variety of firmness available makes it easy to use as a ground meat substitute, in sauces, baking, soups, stews, casseroles, sandwiches, beverages, etc.... One of the great things about it is it will take on the flavor(s) of whatever it's used in, or you can marinate it ahead of time in a flavor of your choice to add to something. I put it in all kinds of dishes that I make, and people have no idea it's in there, but they love the food. If they ask ahead of time due to allergy conditions I tell them, but otherwise everone's been happy so far, and healthier for it.
