You missed one control
Lime Water + Lemon = ?

The results are just as expected. Lime water (a hydroxide) is reacting to the Hydronium ions of the acid ( citric acid C6H7O7-H).

As I explained earlier, the Calcium Hydroxide does not conduct electricity and next to none of it dissolves, so there is minimal change in TDS.

What you are observing is an aspect of Le Chateliers Principle

There is no electrical energy being created. It is just a simple acid-base reaction that a grade 8 learns about in Science class.

Calcium Hydroxicde + citric acid <---> Calcium Citrate + H-OH
Calcium Citrate is itself very insoluble but not as insoluble as calciume hydroxide, so you get a spike in TDS. No great mystery
