Squats are known to stimulate the production of testosterone and Growth Hormone, obviously helpful hormones for gaining weight.
I think the squat advice is great! I would like to add, however, that in some underweight people, an underlying medical condition may be inhibiting proper absorption of food. In these cases, weight loss will result from exercise of any kind, since the calories simply cannot be reclaimed from your food.
Also, if you 're a vegetarian and working out you should know a couple of VERY important things about your body: Firstly, your body absolutely requires some source of saturated fat and high quality oils. An excellent source of vegetarian saturated fat is coconut oil. Also, if you eat dairy, you can add ghee (clarified butter) to your diet. Have as much ghee as you like -- it is SO good for you. Secondly, soy is not an acceptable source of protein, not because of the lame-duck partial amino acid argument, but because it contains phytates (chemicals) that actually BLOCK the absorption of vitamins, minerals and protein. You can use goat's milk, which is generally tolerated by those who cannot drink cow's milk. Additionaly, you can eat Urad Dal (Black Gram), a type of lentil that is absolutely packed with high quality protein.
Lastly, Cow or Goat Colostrum, that pre-milk that is produced by the new mother, contains Growth Hormones and Immune-system factors to encourage strength and immunity in young animals. It is shown in humans to have a very powerful muscle-promoting effect.
