Generally speaking, the smaller the bean, the easier it is to digest - mung beans, lentils and aduki beans, for example, are all pretty easy to digest especially if you cook them until they split.
There is a recipe for Mung Beans & Rice in my book that you may like to try.
Garbanzo and black beans can be very gas producing. Pinto beans a little less so, especially if they are "refied." As you system gets clearer and stronger you will be able to digest them better.
To decrease the gas producing potential of beans in general, you can soak them overnight or throw in a piece of kombu seaweed in the pot they are cooking in. The seaweed will also add flavor, so don't add too much or it can over power it.
As for you protein drink....Honestly, I 'm not thrilled with it. Not the best food combination. What are you trying to accomplish with this? Is it a meal replacement for breakfast or a protein supplement drink?
I think a better choice would be to get some Ultimate Meal powder. It has no common food allergens and really sustains you if you are using it as a meal replacement or snack.
If it's for breakfast, I think a much better choice would be to make up some "Sunny Eggs" (recipe in my book) or have a bowl of "Raisins & Spice Hot Cereal" - but omit the apple juice.

P.S. You need a pretty good blender or food processor even better, to make the almond milk. YOu can always strain out the chunks, too - fyi.
