Don't ever heat anything over 105 degrees. The dates are soaked sometimes, according to raw chef Juliano, to get them to a creamier texture if that is what is desired in a recipe. I've eaten the dates raw out of the container--they are the best thing I've ever eaten, I can't imagine adding raw chocolate to that in a recipe and so I'm going to hold off making any sweets or desserts until I'm raw for 90 days. He says that soaking is alot about texture as well as bringing out the flavor of foods and in the case of sprouting, to make them more bioavailable.
