I guess there are different points of view on what is considered "raw", but roughly I thought it was any food that is not cooked above a certain temperature. I believe it is somewhere around 110 degrees, give or take a few. Some people may even say it's higher or lower.
If you look @ a raw vegan restaurant, many items on the menu, I believe, would have to be dehydrated. They may or may not pay attention to the temperature during dehydration. (I'm not sure, I've never been to one).
Dried figs are very good for you, although it's hard not to get too carried away with them, as are dried apricots.
The best way to ensure you're eating raw nuts would be to buy them in-shell. This could also keep you from eating an entire bag, since you have to crack each one individually.
