Um, well, many can eat quinoa without problems coz its high protein and very high fibre. Its actually a seed. You can substitute that for rice, but make sure its the whole grain, the crushed stuff is like wallpaper paste. Then there is buckwheat flour, which is made from the root of a sort of rhubarb plant, and many have success with that, making pancakes and the like.
And gram flour. Thats quite nice, its made of chick peas, and you can make bhajis with it. (Do you eat them over there? We love them here!)
Eggs are usually OK, omlettes.
But you might NOT be grain intolerent. Thing is to switch to the above, get rid of the gluten free crackers/pasta for a week, and see what happens. I know its a pain, but you gotta turn a few stones over to find out exactly what you are dealing with.
