I used to use rice milk to mix my buckwheat pancakes! With lemon juice and Xylitol on them like crepes!!
I adored them but I used buckwheat for cooking too much and my leaky gut has now made me allergic to it and I can't touch it anymore.
I can now make pancakes with gram flour - I make thicker ones more like american pancakes than european ones. Also very yummy so I am taking it easy with the gram flour this time!
I am now over a year into my diet and can tolerate a couple of pieces of fruit a day so I love my pancake with choppped strawberries or raspberries and live yoghurt!!
I also used to make shortbread with buckwheat flour, organic butter, stevia and ground almonds!!
