I am in the same boat. Always either chicken of fish and a salad with pumpkin seeds, soups, stir-fried veggies. I have my moments where I say, I want my body back, my life back. I want to be normal again. I want to eat a piece of bread again. And then I tell myself that I must be one of the lucky ones who figured it out before it was too late. So I hear ya!
I do find though that occasionally I can have some quinoa and have even eaten quinoa pasta with no great problems. I also find that limited quantities of legumes work for me - lentils, mung beans and one piece of Ezekial Bread is passable on occasion. These are not everday foods and always in small quantities.
All I can say though, if it weren't for the buckwheat pancakes, I would truly be in despair. These are my staple. The buckwheat never bothers me or bloats me. I have even coated chicken with buckwheat flour and fried it, for some variation, and it is pretty good. I keep saying I am going to make biscuits but have yet to try it. If you haven't discovered Buckwheat (wich isn't really a wheat),go get some today, you'll be glad you did.
