Vegetables are also carbs. You cannot avoid carbs entirely Everyhting has a carb content to it even meat. Without carbs we could not live. The idea behind millet, quinoa, buckwheat etc is that they are complex carbs with all minerals intact that breakdown very slowly just like the carb in vegetables.
Are you looking for some other magic answer because there isn't one. You will lose weight on the candida because of the low carb content ...not n o carb content but low. If you are losing too much weight you should add more carbs. Starving the body to death will not help candida. I already went that route adn all it does is starve the body of nutrients and make the body even weaker in defense against candida.
