You dont need a kit. I bought one just to make my life easy for the first few batches. I live in the UK, temperatures are variable and I dont have my heating on so it was easier to rely on a kit to keep the temperature consistent. It was a bit of a rip-off as its small...one litre, but I decided to sacrifice the extra pennies.
