First of all, let me congratulate you and your countrymen for putting on the absolute best olympics to date. I follow both summer and winter olympics without fail and
Torino put on a treuly spectacular event. There were so many awe inspiring moments.
I'll bet everyone was going crazy there, when during the last event of the games, in the grand daddy cross country ski event, Giorgio di Centa won gold in the 50K. Then in front of his home crowd, he gets his medal presented to him at the closing ceremonony. What a way to cap the event for the home crowd, Awesome! There were so many memorable moments and the opening ceremony was very incredible, especially when Yoko Ono gave her speech about world peace and then Peter Gabriel sang John Lennon's "Imagine" right afterwards. I felt a shift in the global consciousness at that point. ;-) I thimnk the organizers knew to utilize the fact that a billion people would be watching so......
What I want to say to you is this. We do what we can, where we find ourselves and plan to make changes that take us where we want/need to go. When I was my sickest, I changed my entire life. Left behind a high paying position, "dream" job, left an exciting city life behind and moved to a very small town in the mountains for better air, and a place to heal. I placed high priority on food, knowledge, awareness, etc and took my self where I knew I needed to go.
So what I am saying is, do what you can, with what you have, and plan to do more, based on what you need, to get well. If you can grow wheatgrass and sprout your own seeds, you can create non toxic, highly nutritious, living food right where you are. You live in olive country which is a super food, but not a big portion of your diet although an important one. Can you find local farmers who have organic fresh fruit? Where there is a will there is a way. Tell yourself/the universe your intentions and expect it/them to show up.
Sometimes you have to make hard choices about moving, especially when health and wellness are concerned. What is life without quality of experience? You must decide your priorities. You create your reality. You're in control of your life.
Here's an interesting article on fermented vegetables including saurkraut.

As far as the 80/10/10 goes, the ratio is based on calories and many people report this to be the ideal raw approach for them. Seeing as we were fruitarians in our ancectry, it makes perfect sense. You my freind, will need to manifest some organic fruit in your life ;-) In the meantime do the best you can. Keep the fat down to below 10 because there is more and more evidence that fat is more important to control than healthy fruit sugars concerning candida or blood
Sugar related issues.
Here's to your healthy future!
