I would have starved to death long ago if I had to avoid ALL breads and grains. I don't think it's particularly healthy- especially given that so many of us have been on this diet for years and years ( I certainly have ). I think your sandwich sounds tasty and very healthy even for candida people. My only suggestion would be that you definatelty do limit the breads to maybe one or two servings a day and stick to the gluten free wheat alternatives ( as Sans Sucre suggested I believe ) :-)
