repost of recipes
Hi Rick,
I am reposting my substitute for bread and a few other things if you want to peruse it : )) Also, check out Jhan's blog...there's a recipe for bread. Also Rachel posted a recipe for muffins and there's a recipe for rice milk that I posted about a week ago...let me know if you need some help finding these : )) By the way, unlike some other recipes you may find on the 'net' these are REALLY candida safe!
Take Care,
Alex
Here's the old post:
Because I believe that the candida is one of the principle avenues to ridding the body of candida...YET...is the most difficult to put into practice, I am posting some of the recipes/foods that helped me adjust/continue the candida diet. Each of these, although simple, are great on the diet regardless of your degree of candida sickness!! (obviously, each person has their individual
food allergies ). Much of it is very simple...Hope it helps...
KEFIR
This is not a recipe, but I wanted to include the importance of this drink...it helped my fight with candida so much...
SANDWICHES…WHERE’S THE BREAD!!!???
I am sure that most people know the recipe for buckwheat pancakes (will include at bottom). I make this recipe with less water and more baking powder allowing the mixture to rise more and become thicker. Put the whole mixture in the frypan in order to make one big pancake. Allow this to cool and cut in 4x triangles. Since these are thick you can slice them. This method makes a wonderful bread substitute. You can make wonderful veggie sandwiches….you can include salmon, tuna (include onion, garlic …if not allergic). Because oils such as sunflower seed is wonderful for the body…you can make and use your own mayonnaise. I love it!!
Here's how to make your own mayonnaise:
Making it is tricky, because it is an emulsion. You need a food processor to do it. You could try using a blender, but you would need a very steady hand. Recipe makes 1 1/2 cups, and keeps, refrigerated, for week.
1 egg
1/2 tsp. salt
3 Tablespoons squeezed lemon juice
1 c. safflower oil, or other “good” oil
In the bottom of a food processor, process egg, salt and lemon juice. Process. Keep it running while you use the feeder tube to put the tiniest stream of oil in. Keep it steady until all the oil is used. Continue running it until the mayonnaise reaches a creamy consistency. Don't stop the food processor until it's finished, or it will be ruined.
Don’t worry about the “correct” amounts. Sometimes I use 2 cups of oil, sometimes, 2 eggs…
You could flavor it with a tsp. of your favorite herb, if you want all your mayo flavored.
SUBSTITUES…on pancake bread
- pumpkin seed butter
- coconut oil
- butter
PUMPKIN SEED BUTTER, PUMPKIN SEED BUTTER, PUMPKIN SEED BUTTER…OR PUMPKIN SEEDS!!!!!!
EXCELLENT ANTIFUNGAL…GREAT TASTE…FATTENING….can put on rice crackers, buckwheat pancakes…also can mix with coconut oil…mmm, good!
(Side note: I had been on the diet for 4 months when I encountered PS butter...I stuck to the diet, but I had begun to feel that I WAS NOT A PART OF THE HUMAN RACE!! When I put the PS butter on the pancake bread and it tastes like peanut butter...I can tell you I was IN HEAVEN!! I felt HUMAN!! It seems like it would be a small thing, but it was a turning point for me!! I thought I would share!! : ))
SUNFLOWER SEEDS/TAHINI
Mix with a little warm water and lemon juice…pour over veggies. VERY GOOD!! And Excellent for the body (will do a separate post).
FOR THE SWEET TOOTH…
Try mixing lemon juice with xylitol (or stevia). This mixture can be heated in order to dissolve the xylitol more efficiently, but I never bothered. Pour this mixture on buckwheat pancakes…this will CURE THE SWEET TOOTH!! : )
spread almond butter (decadent!!) on pancake bread
CHOCOLATE CAKE (on a candida diet…are you nuts??!!)
You can add unsweetened cocoa and xylitol to the dry ingredients of the buckwheat pancake recipe to produce what resembles in taste --- chocolate cake! I don't have the measurements for the amount of cocoa or xylitol...just estimate! I am not very precise from one pancake mix to the next. COOK ON LOW HEAT TO PREVENT BURNING/STICKING TO PAN!! (The additional ingredients seem to make it more susceptible to burning.)
A friend (who can eat whatever he wants) actually enjoyed a piece and agreed that it tasted like chocolate cake...you can also smear almond butter over the top…Quite Decadent! Enjoy! This recipe does not feed candida!
Recipe: Buckwheat Pancakes...
1/2 cup buckwheat flour
1 tsp baking powder (non-gluten and non-aluminum) (can use less...more allows it to rise)
pinch or two salt
1 egg (can use 2 eggs)
1 tbsp coconut oil (or other oil)
approx 1/2 cup water (estimate how you would like it…less water allows mixture to become thicker)
Additions: to the dry ingredients add cocoa and xylitol (start with a level tsp of cocoa and maybe 1 or 2 tbsp of xylitol…just estimate…it’s been a while since I made it!!)
MILLET (gluten free)
100g millet provides 9.9g protein, and 6.8mg iron (higher than other cereals).
I put 2/3 cup boiling water to 1/3 cup millet grains. Then I reduce the heat to minimum and allow the water to be absorbed by the grains for the next 20 to 25 minutes. No stirring or anything else required!
Breakfast or Supper: When it's done I put some coconut oil on it or any other "good" oil (such as sunflower, flax...). I tend to sprinkle cayenne (circulation), turmeric (great for liver) and/or coriander (body detox)…there are many others that are good! Quite delicious!
EGG –DROP SOUP
Use either vegetable or chicken broth. Grind
Celery and/or insert broccoli, cabbage, cauliflower ect. Heat enough so that the veggies do not soften too much as you want to retain some veggie enzymes!! Then I gently stir two raw eggs into the broth. Add some cayenne pepper (other spices…up to you!!). Also, add coconut oil or organic butter after you place in bowl. It’s quite yummy!
RICE PASTA (cures that craving for greasy foods!!)
I literally drizzle sunflower oil (can use other good oils) over pasta when done. Add
Sea Salt and beneficial spices. For additional good health and because rice can be constipating (although the oil certainly helps!!)…add a side dish of carrots or kale or other fibrous veggies…! Excellent meal, in my humble estimation.
ABRAHAM'S STIR FRY SAUCE RECIPE (I haven’t tried it…but I hear it’s good!!)
My thoughts: would substitute the milk for homemade youghurt or a bit of kefir. Though they lose their probiotic value, many people are allergic to dairy and/or soy. Try rice milk only if homemade! Store-bought contains TOO MUCH
Sugar . I made this mistake when starting the diet!! LOL!!)
The spices contained in this recipe are VERY GOOD for the body (i.e. detoxing…liver function…)
Recipe:
Grind some cashews, my food processor (best way) broke so I use a blender (fine if you do small batches). It should be close to powder. Add your favourite fat, I use olive oil, I bet coconut oil would be good. Butter works too. It's about 5 parts cashew to one part oil, like runny cashew butter. Stir in some milk, any kind. When I'm lazy I use cow's milk but rice milk, nut milk, soy milk, etc should all work. Make it thinner than you'd like, as you cook it'll thicken. If it gets too thick add more milk. THe main spices are ginger and curry, don't be shy with them. I also add some cumin and a bit of garlic. If run the fresh ginger through a garlic press you can get ginger-juice and have a smooth sauce (if you ground the cashews enough), otherwise you'll get chunky bits. Salt (I use
Sea Salt ) of course, some pepper if you like. Cayenne pepper if you like it spicy. Last is the sweetener, I add a bit of stevia extract, it makes a real difference but you could skip it if you like. Obviously it's very low
Sugar and low carb. You could probably make it cold with flax/hemp oil but I haven't tried that. I usually pour it over fried veggies like bok choy, any peppers, onion, broccoli, carrot, bean sprouts, etc.
