This morning I got up early to try your recipe, and minced the kale up and kneaded it A LOT with sauerkraut and also fine-flaked mushrooms kneaded with a little salt. Then I pressed it all under weight for a bit. The mushrooms practically melted away, adding a nice taste. My only trick will be finding a way for my teeth & tummy to deal with the fiber, I couldn't eat much of it at all. Maybe time to buy a Cuisinart, hm...
But the kale tasted really good!!! And was very soft. Nummy. So your recipe was a big hit.
