That's fantastic that she liked it! Mango sounds like a fantastic addition...oh wow. I'm almost salivating right now just thinking about it, how it would add just a touch of sweetness....mmmm. I'm a mango fiend.

The kale salad really is a crowd pleaser! I made a nice amount to take with me to our family's Thanksgiving dinner last year. I didn't make a tons, or anything, because no one else is even remotely interested in eating anything healthy on Thanksgiving, and I figured I would be the only one eating it. There they were surrounded by turkey and all the trimmings...the table was literally groaning under the weight of all of the side dishes. And yet half the people there zeroed in, with great interest, on my molested kale salad. They kept asking about it, and taking little tastes, and before you know it, it was gone, and I got three emails the next day from relatives who begged for the recipe! Tweet
