Thanks for the compliment, but I don't really know a lot I just understand the basics.
As for quantity... after a lot of research and thought, the forumala I've come up with for determining the amount of probiotics to ingest per day is... MORE.
Seriously, that's all I do, just as much as possible. Every meal that I remember I take pills afterwards, sometimes a couple, and I eat 6 times a day. A glass of kefir every day, yogurt whenever I get the motivation to make it. I'm really lazy on the sauerkraut I've been meaning to get a big pot going but haven't yet. That's just the probiotics I ingest orally, not mentioning what I put in the other end!
