You have a severe case of SIBO (small intestine bacterial overgrowth)

SIBO causes inflammation in the bowels which increases the sensitivity to pain.
The gas is being produced because the food is being femented in the gut by all the SIBO bacteria.

Classic SIBO symptom. When you take probiotics and your symptoms get worse, it means you have SIBO, probably an overgrowth of lactobacillus (probably).

Egg whites are very difficult to digest. You should avoid them.

You are constipated which means you are not eliminating the waste material which means your body is getting accumulating with all that garbage.



"AND SEVERE THIRST most days despite drinking lots of water"

When food gets fermented in the gut, it draws a lot of water into the intestines. This depletes the water in the body.
Also, since you are under this much stress I am pretty sure that you have adrenal fatigue which again causes dehydration.
Add 1 tsp salt(natural salt), 20-30 grams dextrose and 1 lemon to drinking water. That will help you with dehydration. Also, don't drink too much water at once. Try to drink 1-2 sips of water in 10-15 minutes.

You can try Liver Flush and OX bile enzymes.

Have you tried low fodmap/SCD/GASP diet? That will definitely help.

You definitely have methane SIBO. The SIBO bacteria are making methane gas which slows down peristalsis and cause constipation.

Because you have SIBO. SIBO means an overgrowth of bacteria in the small intestine. The small intestine should have only a limited amount of bacteria. If the bacteria (doesn't matter if they are good bacteria or bad bacteria) start growing beyond that number you will have digestion problems. By taking probiotics you are adding more bacteria to the small intestine which is already overloaded with bacteria. This is worsening your problems.
You have to start with a very low dose of probiotics (something like 1/4 teaspoon of water kefir ) which doesn't make your symptoms worse and build your dose up over time. It might take a few months or even a year before you can drink 100 ml of water kefir or sauerkraut juice.
