I can't advise you since I'm not a doctor, but I do have a few suggestions.

You don't have to have Celiac to be Gluten intoerant, but since you have gone Gluten free that probably isn't it, unless you are eating food you think isn't Gluten. Some grains are processed in the same plant that wheat is. Also you could be allergic to any carbohydrate. Search for foods that have been proven to cause allergies. Eliminate each for a period. Milk products and dairy are one.

You haven't mentioned your diet. Organic? Have you taken any antibiotics prior to having this problem. Any other drugs beside the PPI's?

This is just me, but I wouldn't take any drugs because they only treat the symptoms instead of the cause. weighing the benefits against the risk is the favorite Big pharma BS. If I wanted to gamble I would call my bookie, or go to Las Vegas. Take the PPI, Prilosec. http://www.pbmattorneys.com/prescription-drug-injuries/proton-pump-inhibitors/  If a PPI made you worse, you might want to look into this. http://www.rxlist.com/prilosec-side-effects-drug-center.htm

Suggestions: For the stress, sleep problems I would turn to EFT [Emotional Freedom Tecnique]. Easy to learn, and it works. My favorite teacher: http://www.fastereft.com/

Colonics: If you do this Find one that uses a closed system.

Probiotics: You need some of those bacteria, not overgrowth [Unbalanced] http://www.customprobiotics.com/ is one I use.

BTW I have no connection to these products, just have used them and can recommend them.

That should keep you busy for a while, and hopefully help.
