I understand what you are saying. But the bible says the beginning of wisdom is fear. (Proverbs 9:10). We don't stay in that fear of course, but when we first encounter the Holiness of God, I believe there is a fear at first in light of our sinfulness. Then as we begin to seek God further, we see His love for us and that drives out the fear. (1 John 4:18)
I see this quote as saying something similar. When we first encounter God's Holiness, just like the initial reaction is fear, the beginning of wisdom, the initial reaction is also humbleness and seeing ourselves as sinful lowly creatures. But as we seek God further, we see ourselves as having Christ's righteousness (because of what He's done for us) or as a new creature (as you said).

In other words, Christ brings us first low, he humbles us, before he lifts us up high.
