I resolve this potential problem by raising the Distilled Water's ph with a teaspoon of Potassium Bicarbonate per 5 gallons.

I still enjoy my coffee, and further raise the coffee's pH from 5.0 to 7.0 with a pinch of Potassium Bicarbonate. A pinch of baking soda can also raise the pH.

We use pH test strips to raise our pH more toward optimal pH as suggested by Dr. Brownstein in his Iodine Protocol:
