Re: Newport inspired Sourdough spiced Rye
This bread is tasty with some butter toasted then coconut oil & raw honey, of course that would make almost "any thing" taste better! all I have right now.... going for some orange marmalade soon... I do believe it could have used some more water & proof/rise, next try.
In the eighties I had a Canadian co worker(German/French) who lived in Windsor on the weekends, maybe 70-75 years old back then.. talked about growing up, how the borders moved every so-many-years, so lots of people lost their identity..(He's talking, I'm listening..) he started eating, for lunch, one day a whole onion, next day might be a tomato with salt, that's it! But one day he brought in this tiny little square slice of what looked like meatloaf...heavy,dense,no holes, like a piece of cake. I inquired and he said this was a very special bread made for him from a bakery in Windsor. Said this is real German rye bread only made if there is enough people ordering, like once a month or "something" He shared it with me and MAN! if this ain't the closest to that flavor!
I did get the directions to bakery, have them here somewhere.. DID drive over and found the bakery, ordered some, ate it for quite a while...Not sure if they are still there
