It's not a food, but I believe that calcium supplements contribute to gallstones. If your body doesn't absorb any of the calcium, it can travel to different places and calcify. Joints, nerves, bones..

Also, canola oil and hydrogenated oils (shortening, etc) can cause them. These oils are not digested by the body. I can only imagine the kind of havoc they wreak on the gallbladder.
