esters are the condensation product between an acid and an alcohol. They are generally lipid soluble, fat soluble, whereas in the case of organic acids such as ascorbic, the acids are water-soluble. Theoretically, the body can de-esterify esters into their components and this does occur. Ethyl butyrate is ester of butryic acid and ethanol, the material responsible for the aroma of pineapple, as for but one example in nature.
