Potatoes are a "night shade" and many people, like me, find ill effects from them. I eat Argentine beef liver, powdered, to make sure I have enough stored iron, plus take Twinlab iron caps. If I start having restless leg syndrome, I know I'm not getting enough iron since iron has made it go away in the past.
I check my ph level each time I go to the potty and I know for a fact that mega doses of Vitamin C as regular ascorbate will make me more acid. On the other hand mega doses of sodium asorbate raises my ph. And btw one researcher has said that too low ph will cause cancer sometimes, but that too high ph can lead to things like leukemia and lymphatic problems.
I am getting carbs through things like oatmeal, kitchn grown sprouts etc.
What I am doing is working. Everyone's body is different.
