I can understand the benefits of gelatin, but coffee is something I quit due to personal experience. Not caffeine, coffee. It simply does not feel like it benefits my body as much as it detriments. It feels as though healing takes longer when consuming coffee and energy rises then flops for 2x the time. Plus, Ray Peat sounds good on paper, but studying his conclusions and looking at his references where he pulls his information is dubious. Once you start looking at what Peat re-interprets, especially the research he paraphrases, it does not all make sense how he can list his ideas with conviction. I do eat a raw carrot daily however, it is what I substitute for such stimulants like coffee for energy and stability.

Science that makes claims - instead substituting personal observation and experience as primary sources of conviction rather than other means. It feels like a full circle, back to basics, due to the dilution of research with fraud of their own admittance post-analysis.
