Wrt your lipid panel, I might suggest you look at what types of oils you cook with. When I started cooking with coconut oil and ghee my HDL went up by over 30% and my triglycerides dropped by over 40%. I was particularly surprised at the HDL boost. For the past twenty years my HDL was always about 34-38. It's now 45.
I have been on gluten/dairy free diet for years and in the past year I've moved on to eliminate all grain. Surprisingly, I don't think these dietary changes had a substantial impact on my cholesterol levels. Exercising more/less didn't have much of an impact either. But changing cooking oils did.
