Milky yellow is good, that is the color mine is too. And yes, sour. It does not taste good, but I have gotten used to the taste. The vitamin c gets encapsulated inside the lecithin in tiny bubbles. This happens in the ultra sonic cleaner. That allows the lecithin to carry the vitamin C through the stomach wall into the liver. Otherwise the C would not get absorbed very well. I am so glad that I decided to try it! As for the popping more, I don't know what would cause that, but it is a good thing. I stir mine gently with a plastic straw while it is in the cleaner, and I run it for at least 30 minutes. It is very good for other things too, one of the being the skin. And it rebuilds your immune system. I do not heat my lecithin. I put it in a jar and shake it then put it in the fridge for a couple hours at least, most of the time overnight. Then I blend it with a stick blender really well before adding the ascorbic acid to it. It has always worked for me and don't have any separation of the mix when it is done. I use the non-gmo lecithin, but the next time I need to get it, I think I will try the powdered sunflower lecithin. Just to get away from the soy. Keep me posted on how it goes. Some people mix it with juice to mask the taste. I take a medicine dose cup full three or four times a day. Sometimes more.
