Diet Help..Doing everything right but....

Hey everyone, I'm currently trying to bulk so I eat 5-6 meals a day. I've been on the candida diet for a while and I've been following it strictly; e.g. no sugar, no vinegar, no yeast, etc. However, even with my current diet, I'm not sure why I still keep getting a bit foggy/candida symptoms immediately after eating some meals. I'm vegetarian, and here's a typical list of the meals that I have per day:

Meal 1: Shake #1 with ½ cup oat bran (gluten-free), 1 cup sugarless almond milk, 3 TBSP sugarless almond butter, 25g of flavorless all natural whey protein [500 calories, 50g protein]

Meal 2: Quinoa spaghetti & sauce [800 calories, 20-30g of protein)

Meal 3: Chipotle burrito: Wheat tortilla, brown rice, black beans, mild/medium sauce, guac, lettuce [700 calories, 20g protein);

Meal 4: Shake #2 with ½ cup oat bran (gluten-free), 1 cup sugarless almond milk, 3 TBSP sugarless almond butter, 25g of flavorless all natural whey protein [500 calories, 50g protein]

Meal 5: Some sort of legumes or vegetables [e.g. chickpeas, pigeon peas, cauliflower] with brown rice (500 calories, 15-20g protein)

Again, I’ve ensured that everything is yeast/sugar/vinegar-free, among other things as well (I’ve even contacted Chipotle to verify). Overall, my diet is mostly gluten-free, except for some wheat here and there (even though my naturopath hasn’t restricted me on wheat, I limit myself anyways). Yet, when I eat this much, I still seem to get brain fog symptoms among other candida symptoms. Anyone have any idea what I’m doing wrong? Thank you so much for your time!
