Are you taking antifungals? Diet alone will not get you rid of candida overgrowth. Also, even if brown rice and quinoa are healthier grains with lower GIs, they still cause problems for many candida sufferers, especially if mixed with fats.
Trying to bulk and getting rid of candida at the same time is not an easy thing to do. Excess protein intake is hard on the already impaired digestive organs, and so are the fats. It seems that high fat/high carb diets are probably the worse for candida. Some cured themselves on a low carb/high fat diet, some on a high carb/low fat diet. Remember that if you have moderate to severe candida overgrowth, your digestive system is not working properly and any food will be hard to digest.
What I suggest for you is that you consider some type of fasting. Freshly extracted vegetable juices are best in my opinion. You could fast for few days during which you attack candida agressively, and then go back to the healthiest diet as possible. If fasting is too intense for you, you can go the smoothie way. Smoothies are great and much easier to digest than proper meals. Be sure to put lots of greens in them (your current diet seems to lack greens). Use coconut oil as your main source of fats (potent antifungal and the easiest fat to digest), and continue to use a good natural whey protein. Avoid mixing too much of a food groupe with another. Last but not least, make your own homemade goat milk kefir and aim for 1 to 2
quarts a day (2
quarts is 64 grams protein). Extremly beneficial for candida issues.
