Did you have any chronic fatigue or brain fog? With celiac disease, you can have neurological or gastrointestinal symptoms. Sometimes, you even are affected both ways. Since my nutritionist has gluten sensitivity and her sister has celiac disease without peeling lips, I was not sure if this was the cause. However, information on the internet shows that many people suffer from peeling lips due to gluten sensitivity. The difference might be that my nutritionist's sister gets severe cramping and diarrhea whenever she eats gluten. But I do not have those symptoms. I just get bloated. And she does not have peeling lips symptom. I also do not think Elisabeth Hasselbeck "The View" had peeling lips. Again, people with celiac disease can experience different symptoms.
