May I ask why you're doing it this way and for how long? Why no fruits???
I was basically eating your way (mostly salads) for about a month after coming off a week-long veggie fast that cured my worst health condition and wanted to start eating more plant-based, but I started to lose weight rapidly until and researched more and found out there's just not enough calories in only vegetables to sustain you for very long. I had to start adding in grains, tubers, and fruit to get the calories I needed. Now I'm eating more towards fruitarian.
