Almost everything we eat eventually turns to Sugar -- or more specifically -- glycogen -- in the body. White bread isn't an ideal food at all, but if one were to eat it with a high fat food, and some protein, that would completely negate the glycemic index of plain white bread.

A great book on the subject is "The Glucose Revolution" -- it dispells some of the myths or misunderstandings about the glycemic index.
