Well, what works for you, might not work for others (it sounds like you're so sure of it :)). Just because you seem to have a gluten intolerance causing or making your EC worse, that doesn't mean that everyone will see any results by avoiding gluten (I believe there have been many people that avoided gluten that haven't seen any results).
I myself have started to eat no gluten and almost no dairy (I think about a week ago), but haven't seen results yet (my peeling cycle is very long, a few weeks). I will keep on doing it for a while and see what happens. Also, you can eat much more than just rice (eat brown rice if you do want to eat rice), there are many healthy glutenless things like millet, quinoa and amaranth that I eat almost every day at the moment.
