I strictly stuck to this diet and saw some improvement. However, I've had to modify it based on some
food intolerances that I have discovered throughout my journey trying to figure out how to overcome EC. I had a blood test performed that tests for latent
food allergies - that is foods you react to up to 3 days after eating it. The test is called the "IgG Food Antibody Assessment." It's expensive, but worthwhile in my opinion. Comes to find out that I am sensitive to dairy, 4 types of fruit (apples, apricots, cranberry, plums), beans (string, kidney, pinto), mushrooms, most meat (including chicken), a range of nuts and grains (wheat, soy, corn, etc.), coffee, and chocolate. So, I had to alter the diet described on the site you reference. You may also as well and you should feel free to deviate some (i.e., use Stevia) if it will make the diet more feasible for you.
My suggestion is for you to consult with a doctor who practices nutritional/functional medicine to determine what foods are best for you to avoid. Remember, most of us on here are not medical experts and thus advice should not be taken as generalized, reliable cures. However, I do think there are many starting points that will eventually lead you down the path of healing.
